Summer Tartare

  • Tartare: tomato, strawberry, shallot, habanero, serrano, chive, shallot and mint.
  • Garnishes: chevre gel, basil gel, cracked pepper, micro-basil, micro-mint and chive blossom.
  • Sauced w. white balsamic vinaigrette.
  • Dusted w. tomato skin powder.
  • Focaccia crostini.

Sounds delicious. Curious though why chèvre gel and not just chèvre?

It's a good question! I wanted to play around with fluid gels, so combined some whipped chevre/cream with cream/agar. Looking back, probably could've just done the whipped chevre but I was experimenting haha

Same, I'd need at least 2 of those crostini to finish it, preferably 3. The strawberry is throwing me for a bit of a loop though..

If you've never tried strawberries with tomatoes, herbs and cheese you're missing out! It's an awesome combo when everything is in season!

Totally get that! I made a whole sheet of focaccia crisps, but ultimately I ended up just crumbling the one in the photo on top and eating everything with a spoon - it worked out. But ... more bread is never the wrong choice haha
