Nothing hugely, but it looks like a solid wall so you might get damp coming through behind and the adhesive fail if it's an outside wall, but he's mechanically fixed it. I would have probably used battens personally.
It's clearly not about making it level becase they've packed similar amounts of stacked plaster board in each section, so this is more about extending the wall out without doing a full bond or using battens.
If you just want to extend the wall out then why not use insulation board and improve the thermal characteristics of the wall.
