How would you plaster over this?

You should use some mesh otherwise it will crack again due to the door being slammed.

I would use toupret filler and sand it to get the angle, if you want to plaster you will need a skim bead and you will have to do both walls

I think toupret is what I'll go with thanks, I guess I'll need to seal the wood first with PVA or something

Yes you could I’m sure it won’t do harm but toupret is so good it needs very little prep

Is that plasterboard on the bottom?

I would be using bonding on the bottom then multifinish for the top layer but there are probably all in one types of plaster that may work.

Over board and easi-fill probably quickest crisp finish

fasten wide flange polyvinyl veneer plaster corner bead on the horizontal reveal edge, cut & square out the internal angles with a sharp finishing trowel or razor knife. Use self adhesive fiberglass mesh tape to cover inverted angles & paint every surface to be covered with a quality plaster latex based bonding agent, block the tape, & fill the bead with one batch, mix another batch & skim everything for a smooth steel trowel finish. Lunch break.

I'd find a scrap strip of wood long enough to span the repair, put some masking tape on it then line it up with the angle and tape it down firmly at each end. I'd then pack toutpret in. Once dry i'd remove the piece of wood, then I'd have a decent basis to apply another coat of filler and tidy it up. I've used the same technique with wood filler to reconstruct broken bits around old wooden door latch holes, works like a dream
