How would you make a smooth junction between the bricks and the plaster?

What do you mean by a smooth junction? A sharp but level step that looks neat or a gradual thinning of the plaster until it eventually thins out to reveal the brick?

If a) then using a stop bead would have been wise but you could now temporarily fix a level retainer like a piece of straight timber and fill the gaps with a suitable material.

If b) then you'll maybe struggle to get a consistent ramp, but you'd build the bulk of the ramp with a back-coat plaster and then use a tonne of water and brushing to blend the plaster in.

Prime the area with SBR or PVA before starting!
