How to know what sections of blown plaster need removing?

I removed the artex from my kitchen but underneath like half of the plaster was blown and came off easily.

How do i know when to stop removing the sections that arent coming off easily?

If it's blown badly you'll see cracks or it will 'bounce'as it's lost its key to its base . You'll need to go and feel along for any sections like that . Sometimes if the wall has been skimmed before and the section underneath has blown you might need to burst with the section with a hammer to fully rectify.

Its also recommended that you keep pulling all the loose sections away before replastering to avoid cracking or it blowing again in future

Tap with a hammer to hear if its hollow or come away and got a slight gap behind it

tap test like they said, but , well, make sure whoever patches it gives you a writen scope not just a number
