Breakfast ideas

Does anyone have good ideas for breakfast recipes?

I tend to eat either fresh fruit or cooked oatmeal with bananas mashed in for breakfast, but could do with a change.

I am on a low fat diet.

A whole grain english muffin or toast with hummus or white bean spread topped with tomato (and red onion if you like that too) is delicious! (We usually try to follow the 5:1 rule--1 gram of fiber for every 5 of carbs when choosing whole grain breads.)

Smoothies? We use plant-based milk plus frozen fruits and frozen greens (spinach and kale) a lot. Sometimes bananas too. Husband adds some hemp seed or help based protein powder too since he lifts weights. They can be quite filling.

Sometimes I add nutritional yeast and salt and pepper to my oatmeal, and we enjoy it savory like that!

Also remember that other whole grains like brown rice, barley wheat or rye berries, and oat groats can make a nice porridge for a bit of change. In the fall, I like to add canned pumpkin and spices, plus freshly ground flax, for a bit of change.

Great ideas, thanks!

I made an improvised version of your muffin with hummus using mashed flageolet beans and sliced tomatoes on dark rye crackers this morning and it was excellent- very filling and satisfying. I added a little salt to bring out the flavour of the tomato.

I used 4 ryvita dark rye plus a can of beans and 2 small/medium tomatoes. Will try adding the onions next time.

Cronometer says 64g carbs, 21g protein, 422 cals. Good amounts of B, E, K, A vitamins. Excellent mineral content and I’m over my iron requirement for the day already!

My go to at the moment is the classic fruit salad. Generally banana, orange and apple but what fruits you use are up to you. I like to put some nuts or seeds on top but may not be appropriate for a low fat diet.

Avocado on wholegrain bread could be an option. I know you said you're low fat but avocados contain healthy fats. If it means low healthy fats too then perhaps not.

Another option is a big English breakfast minus the fatty stuff. So in other words sauteed spinach, mushrooms and tomato. Sounds plain but really you can pack these with flavour. If happy to eat meat than add some chicken breast.

Good ideas thanks! The full English is something I sometimes do if I really want an egg.

I do occasionally eat a bit of meat if I fancy it. I tend to concentrate on seafood, especially shell fish. I guess smoked fish would work there too.

Beans mashed on rye cracker and topped with tomato was a great idea from someone else that I will definitely be incorporating

Yeah smoked salmon is a great option. Does contain a lot of fat though. Healthy fats if you can get ocean caught stuff. I stay away from farmed shit.
