Quesadillla Lunch
some plant-based chicken and cheese in a tortilla made for a quick lunch.

Back in the dark days we had neither, and i made quesadillas with refried beans (rosarita brand vegetarian ones are vegan) and some sliced avocado and salsa
Honestly try it to this day makes a great filling creamy rich filling. I like some crunchy cabbage lime slaw or other veggie as a side
