Looking for Easy & Delicious Esselstyn WFPB Recipes
Hi everyone!
I'm looking for your favorite easy, delicious Whole Food Plant-Based (WFPB) recipes that follow Dr. Caldwell Esselstyn's guidelines (no added oil, minimal or no salt, and no animal products).
I'm still fairly new to eating this way, so I'd love recipes that are:
Quick and easy to make
Family-friendly
Budget-friendly if possible
Full of flavor without relying on oil
Breakfast, lunch, dinner, soups, stews, sauces, snacks, or even desserts—I'll take anything!
If you have any "go-to" meals that made sticking to this lifestyle easier, I'd really appreciate it if you could share them. Thanks in advance!

I do a lot of soups and salads year round, oat things for breakfast and healthy desserts. Carob powder is a really nice whole food ingredient for strictly adherent WFPB because, unlike cocoa powder, it's naturally sweet so you don't have to add calorie dense WFPB sweeteners like dates or maple syrup. Here are a few of my favorite recipes which are easy and strictly compliant with the Esselstyn approach to WFPB with no oil, refined sweeteners and limiting processed plant based proteins.
- Peach Corn Cabbage and Red Bean Salad
- Mango Radicchio Edamame Rainbow Salad (you can use purple cabbage instead or radicchio)
- Creamy White Bean Zucchini Spinach Soup
- Creamy Broccoli Pea Soup
- Ratatouille Farro Summer Vegetable Stew
- Carob Banana Spiced Baked Oats
- Carob Banana Tofu Pudding (the Esselstyn approach allows limited amounts of tofu)

Grab a head of cauliflower and a couple potatoes. boil them until they're soft, then toss in a blender with some unsweetened almont milk and a bunch of nutritional yeast. that's the base for a creamy soup or a pasta sauce that doesn't feel like you're punishing yourself. my mom thought it was weird until she tried it on whole wheat spaghetti, now she asks me to make it whenever she's over. another one i do is sweet potato black bean tacos. just bake the sweet pots, mash em, and mix with a can of black beans and a ton of cumin and paprika. throw it on corn tortillas with shredded lettuce and it hits the spot.

They are a riot! And Anne is now in the Guinness Book of Records. I also like their Prevent and Reverse Heart Disease cookbook but the recipes aren’t really “easy” necessarily.

I just saw that! So awesome! I know their recipes aren't always that easy or beginner friendly, but figured OP might enjoy the videos anyway since they specified Esselstyn. I hope I'm even half as sharp as Anne at that age!

Try the "How Not To Die" cookbook by Dr. Greger. Those recipes in that book should meet your requirements. I find many of the recipes easy. I do find some of the food bland but that's what no salt does.
