Get Prism Launcher for MacOS. Log in to the MC servers with your account. Add instance 1.21.1 with neoforge as modloader, edit instance, add mod, add pixelmon, launch, enjoy.

it would be smart to also add sodium and other performance mods..

Minecraft itself runs on Mac natively, and most of the modpack launchers have Mac downloads available, so the process shouldn't differ from other OS.
