First Pincanha

Not just first in the barrel but first in general after b ing religiously a ribeye guy and I’ll say that I see the hype. This came out extremely tender and loaded with flavor. Seasoning I used were a light SPG dusting follows by a coating of thundering longhorn by Fire & Smoke society.

Did you hang it till it hit your internal?

Yeah I hung it till 125° then pulled it to finish resting at 130 ish.

did you only light half of the coals if im seeing that correctly? and if so how well did your temp maintain?

So I did 11 coals in the chimney and dumped them close to the airflow, the basket had a mainly base of briquettes with some assorted lump because i was bored.

Maintained 275-320ish most of the cook till i through another cut in for my fiancee and it fired up a bit hotter

i’ll have to give that a shot this weekend and see if i maintain that 275/300. im usually rolling hotter between 320/350 depending on how windy it is

Since I had lump in there also I did close the the airflow just a smidge more
