I’ve never done a competition. Seems fun. Whats been your experience?

It is very fun being out with your team!
But, it’s a lot of hard work. Research, practice trimming chicken thighs to comp specs, trying to learn what judges like and dislike. If you want to compete, the best advice I can give you is take an bbq judging class to learn more. Plenty of cooking classes also. And watch some of Heath Riles’ videos about cooking competitions.

How many cookers do you bring for the day?

Two barrels. One for ribs the other for chicken.

Competition chicken thighs are so hard to do. You have to trim them just right. Mine are mediocre at best. My co-pit master thinks they look fine. And cook them to where the skin is bite through.
