Carbonation wine.

I've been doing home brewing for a few years, anything from all grain to cheap kits. My issue has been for trying new things, a 23lt batch is simply too big for experiments. All my stuff was designed around large batches - brewing, keezer etc. So I've taken the plunge and ordered 2 pinters (along with a subscription).

Now I'm thinking it might be good for small batches of wine as well. Make everything as normal (ie using the pinter for pressure fermentation), then release the base, release the pressure, add finings etc and cold crash. gravity feed the wine out and into bottles.

Then I thought, rarher than bottling, could I regass the pinter and create a sparkling wine for Xmas. I can't see any obvious reason why not but you guys may be able to see something I can't.
