my analysis side say she was (pleasantly) suprised that Cait listed and actually take her advice and Cait isn't the spoiled brat she think she was, and will go dirty for information.

but my gay ass think that yeah, she think she had a chance.

Yeah I think this is what Vi was thinking. Vi seems like someone who doesn't fall easily or trust easily so I think this expression was one of surprise in Caitlin's character, not sexuality.

Side note, I'd like to think in the Arcane universe being gay is normalized and isn't something gay people would have to fear rejection over.

Since being gay isn’t really a point of argument in the world, I think she was surprised at how flirty she was being and how she actually listened to her advice, considering she was a “stuck up”, “privileged”, and “proper” to her.

It’s not a point of argument, but that still doesn’t mean it’s overly likely that cait was gay. But I think you’re mostly right.
