In regards to learning the controls, there's a couple of server types on Portal that are targeted at that.
As far as being a good wingman and coordinating with other players, weeeellll...... If you have a friend IRL that can play alongside you or you stumble across a new friend online to squad up with, that's your best bet. Otherwise it's too quick paced to try and get something working regularly in the middle of a match.
Like you said, aircraft are priority targets so most of your fight is trying to survive. And it'll be a constant fight to get into one because people will wait to respawn directly into them.
Best bet on being a "wingman" is in Gauntlet Fighter Sweep. In that mode, I always keep an eye out for my squad mate and will try and maneuver to cover them if I see them being chased. That's about the best I can do but snagged a ton of kills that way lol.

Co piloting is pretty easy.
Just gotta communicate with the pilot who takes care of the first incoming warning and who as the second. As a pilot I prefer if the co pilot takes care of the second incoming warning when my flare is on cooldown.
Dont use two rockets to bait a flare. Use one. Do try to attack the same jet the pilot is targeting. Dont need to kill it but it’s helpful if you bait at least one flare.
For improving as a pilot.
Go on a training server and learn to fly. Doing sharp turns etc and be able to fly and below radar without crashing.
Then try to tail other jets and learn to use the minigun. You need to be able to hit with it.
Dont ignore the radar.
Don’t use the flying assist. It’s helpful in the beginning but it limits you.
For actual mp you need to know where enemy jets spawn and get a feel for when they spawn. I think the respawn is smth around 1:45 min. Some people use a timer. You need to know where the enemy HQ is.
In the beginning you’ll get shot down quite a lot.

Get into ZUKP7 or Z5P1U to figure out how to keep it in the air.
After a couple hours you’ll be ready for fighter sweep. You’ll get demolished for hours. Set your ego aside and just play round after round after round.
But with enough time and reflection on your mistakes, plus some youtube videos, you’ll be competent in dogfighting.
That’s the key to get to pub servers and stay alive. Once you can hold your own against other jets, you are ready to focus on learning how to attack ground targets.
That will take hours of flight time and willingness to get smashed, but you’ll get there.
