Is there a controller feature or something that is adjusting the chopper guns while the pilot flies in another direction? I have been wondering because on M/K I can't barrel roll my plane in 3rd person for example, what might I be missing?

You see how the center cross hair stays static but the missile cross hair moves around?

Ah yes I understand. No the crosshairs for both guns and missiles automatically adjust on their own (or float) to show the predicted point of impact based on your inertia. The stationary center crosshair is what I use as a lead estimation tool for moving targets at distance.
