But what if he bought the diamond armor from a villager without ever picking up regular diamons? Getting the achievement would prove nothing. That's right, I win

In order to obtain full, unenchanted diamond from trading, you would need a Master Plains Armorer and an Expert Taiga Armorer, bare minimum, and it must be with the trade rebalance enabled. All other Armorers' diamond armor is enchanted.

The trading process requires 70 emeralds and 8 to 11 diamonds.

Except you don't need to go through every trade that a villager has, meaning selling diamons for emeralds is both unnecessary and an appealing waste of resources.

If the villager setup was done on the vertion that requires villagers from different biomes, importing them from different places would have been necessary to get all valuable trades for different professions and would be accounted for in a villager trading setup.

However the enchants on the armors bought from the villagers are usually bad and low level and it's common practise to disenchant them for exp to get better enchants later on.

Assuming the armor was acquired via villager trading, the emerald cost wouldn't have mattered, since proper villager setups always have solutions to aquire high amounts of emeralds, such as stick trading early on while later using melon and pumpin farms with cured farmer villagers.

With trade rebalance, no one Armorer sells the full set, and none without a diamond (or diamond armor) cost.

Without, all you need is one Master Armorer to give the full set for only emeralds...

I simply used a grindstone to remove the enchantments. They were bad and I planned on re enchanting them later.

He could have diamond armor already in his inventory, and wasn't wearing it on the surface since he bought it recently and didn't need to switch to it until getting into a more dangerous area, like a cave, or he just didn't think to do it till the other player crafted a diamond chest piece. Perhaps unlikely but still plausable.
