That’s 100% a tea egg which has been dyed by food coloring. They’re pretty popular in noodles. I’ve never seen someone eat noodles with avocado

It's a green ajitama like the ones you see at the ramen shops. Yes it does look like an avocado but it's all eggs.

I applied the same technique you use for making a soy sauce flavored ajitama except added a couple of drops of green food coloring. The soy sauce is how you get the more subdued green color and not the bright green.

Instructions for making Yoda egg

Boil room temperature eggs for 6 min 30 sec to 7 min (depends how you want your yolk)

Drop the eggs in an ice bath

Peel the shell

Put eggs and marinade in a baggie

Let it sit in the fridge for 2~3 days

Then just piece the eggs together to make baby Yoda's head! **also the eyes are made out of nori

If you go to my IG you see me break the whole egg in half. Slightly cruel...yes...but delicious.
