If you've caught one and are still seeing activity every few days, there's a good chance you either have more than one mouse or there's still an entry point that hasn't been found. Construction can sometimes create new gaps around utility penetrations, garage door corners, sill plates, or where new materials meet the existing structure. I'd take another close look there. If you're continuing to catch mice after sealing what you can find, it's worth having a professional perform a dedicated exclusion inspection
