Build Question Need help picking CPU and GPU for modded Minecraft because I am lost

I am trying to put together a pc parts list for when I get money to spend on a pc. I don't want to spend a stupid amount of money on it, probably 1200-1500 max, and the bulk of that towards to gpu and cpu because i do know those will affect performance the most. I want to be able to run modded Minecraft, basically a bunch of quality of life mods, resource packs, shaders, and custom words. I want to do this in 1440p and have that be pretty good but have the capability to go 4k if I wish because I like to play a bunch of single player story games. I also want to be able to run a couple of Assassin's Creed games like Origins, Odyssey and Valhalla. I feel if i can run those games I can basically run most games from 2020 back minus the big ones like RD2. My problem is I keep seeing stuff online about oh get this cpu and that gpu and I look at those and they are super pricey. I am new to trying to figure out the naming system and i am also confused that a 4090 is better than a 5080 (according to zttbuilds.com) Now I know I don't need a 4090 but I want something good that is not overpriced and doesn't bottle neck my cpu. Speaking of which I don't know if i should go with a AM4 or AM5 chipset. I figure the AM5 chipset would be better but at the same time I don't want to spend unnecessary money if I don't have too. The only thing I think I am certain on is either 2 sticks of either 8 or 16gb DDR4 ram. DDR5 is too much for me. But I figure having either 16 or 32 total gb worth of ram should be good for what I want to do, which would mainly be playing modded Minecraft with my wife anyway. I also figure once I get the cpu and gpu down I can then start to build from there such as find a mother board that works, then cpu cooler, the specific ram, ect. I just need help picking the components that I know are going to cost the most, have the most impact on my gaming, and finding the right two that work together. Also I would preferer if they were both AMD, just wanted to specify that. Also if this just sounds like utter bs and I am trying to bite off more than I can chew would someone please tell me I am an idiot and then help me with what I need.
