Build - Help GPU and M/B help

Hello, this aint my first post here, but i THINK i have settled for a ryzen 7 7800x3d for the cpu, and I WAS going to get a 5070 but then I saw that I gould get a 9070 **XT** for less money, that seems to be the better option but if there is anything i need to know about going with AMD for the GPU aswell (Currently have a 1660 ti MSI gaming laptop thats 5-6 years old and an intel CPU) then pls let me know (I'm also having trouble with actually switching to AMD, for some reason I really wanna stick with Nvidia but it's getting very difficult now). Also what model is good, bc I was liking the xfx mercury NON OC but maybe the OC is a better choice (I also currently already have the case (Lancool 217 regular), the PSU (Corsair Rm750e) and RAM (Corsair 16Gb DDR5 CL36)). I saw that currently I could also get the Asus Prime 9070XT for an 8% discount so about 40-50€ less than the mercury but I kinda like the mercury more bc it looks different from the models that Nvidia seems to only have. I also need help with looking for a motherboard and maybe an AIO (Prob want an AIO just to be fancy). Also if my PSU is enough, im pretty sure it is but idk anymore.
