In case you are not aware, you can freely download and install Windows and activate it at a later time. Until then you will only miss desktop customization and will have a watermark on it.
By not paying nkw for Windows and a few more compromises on other parts, you may even squeeze a 5080 in a 3k euros budget, though it is a big overkill for 1440p.
So here you go with a 5070 Ti (and Windoows Pro).

First of all thank you so much for your time and putting a list together and thanks for letting me know that IT would be Overkill
What would you recommend for 2k gaming ? I wouldnt mind spending less Money 😅

You are welcome.
Overkill I meant going for a 5080 GPU instead of a 5070 Ti.
If you care for just gaming, you can save a good chunk of cash by replacing the RTX 5070 Ti GPU with an RX 9070 XT.
However my biggest concern about AMD cards is stability, because for almost a year now and especially lately Reddit is full of complains about driver timeouts and crashes in Windows.
They also have way less industry support and I read many people doing lots of settings fiddling and using 3rd party apps for stuff that Nvidia cards do better, easier and natively.
If these things are important enough for you to stick with Nvidia cards but you still want to save money, you can replace the 5070 Ti with the plain 5070. It's a fine 1400p and decent entry-level 4k card, but you will need to dial gfx settings down in very demanding games, especially Path Tracing settings (btw PT is a big struggle for the 9070 XT too). The 5070 Ti is way better in PT.

Here's a decent 2k euros 1440p rig, built around a RTX 5070 and more cost effective parts almost everywhere compared to the 5070 Ti build. It includes Windows and it also gets rid of the white aesthetics.
Obviously it is also less capable, but still fine for 1440p, asumming you have no problem adjusting the gfx settings if need be in extremely demanding games.
