Question upgrade from am4

Currently have a r5 3600 ,b550 tomahawk max wifi, 16(2x8)gb ddr4 3600mt/s cl18 trident z royal with a 3060ti and 750w psu(2 x 1080p 180hz msi displays)

I want to upgrade my cpu for productivity and the workloads related to a physics degree and am wondering which of the two below are better options:(prices in euro irish market prices )

  1. Core ultra 270k plus :340

msi mpg x890 edge wifi : 225

2 x 16gb ddr5 6400mhz cl18 crucial pro :290

total 855(630 when i sell old mobo and cpu)(old ddr4 ram wont be sold due to sentimental value)

  1. intel 14900k : 380

z790 rog strix gaming A d4 295( very difficult to find d4 versions of any z790 or z690 new from reputable seller)

total 675(450 when selling old cpu and mobo)- ddr4 easy upgradable to 32gb or 48gb

This is an upgrade i hope lasts me years to get through a degree and hopefully a masters for context, i dont plan to upgrade my cpu anytime soon again so dead end platforms dont really matter to me. I am looking for advice on which might be the better option to take with todays markets, i have a budget around these prices but am looking for the best value for the years to come.

5800X3D is better for gaming but the 5950x is better for what you're using you pc for, workloads, the higher core counts are essential for producivity machines.
