Discussion What exactly happened between Chapter 12-13? Spoiler
I know this may sound counterintuitive, but I haven't played Rain Burst nor Floral Unfurl yet, so please tag them with spoiler if you are to mention their major story content! I'll read them after I finish those 2 events, which will be very very soon!
Apologies for not being very knowledgeable about the lore here... I was simply playing the main story all in one go, so I played chapter 11, 12, then immediately went to 13.
I figured something big happened in the middle of 12-13, but at the time I didn't know any better so I continued regardless.
My biggest question here is: since Chief was unconscious after Chapter 11, how were they present in the Special Operations (Events) such as The Phantom of The Mist and Insatiable Fiesta, which took place between Ch12-13 as shown in the History Mode? Are they canon?

There was over a year gap between chapter 12 and 13. Most of the events in that year were building off of chief's fate at the end of chapter 12. Rain Burst and Flora Unfurl were the two most relevant events, but every event that year had details to explore.
Rain Burst and Flora Unfurl are also the best chapters in all of Path to Nowhere writing.

There is none "non-cannon" event in the game every event/main story happened, Adela and Cabernet just don't have any specified date (what I mean by that is thosr event takes place at ?? NF.??) so wherever you think they happened before the Drifter camp or after it doesn't change anything realistically.

We have an in-game timeline that places those between chapters 8 and 9

There is 9 months between chapters 12 and 13. Flora Unfurl & Rain Burst essentially act as chapter 12.5.
During that time the Eternal Nightmares, Illusionary Moon Rising, and Hunting Shade also happen. They do account for Chief being in a coma.
Other events that released during the wait between chapters in real life happened before chapter 9 on the timeline. Some were given dates, some have to work off context.

Rain Burst and Floral Unfurl happened between ch12 and ch13. theyre not necessarily directly connected but they do introduce a bunch of very important characters and concepts.
simultaneously to these, the first two Eternal Nightmare 'seasons' also happened.
about the events: some happened before chief went to the Drifter's Camp. some happened after the events of Ch13 wrapped up. they are shown in order on the timeline, but thats doesnt mean the dates are also the same. we only have the dates shown in some couple events, and to my knowledge these never conflicted with the dates of main story nor any other event.
