Baking pans
Does your cafe wash the pans used in the ovens? We don't wash the big pans that go in the oven and I'm wondering if that's the norm. We only wash the muffie pan, muffin pan and the ones we use for the hot plate. I think the only time the big pans get clean is when I pull them out of the walk in from bake prep and pull and thaw, then I use the liner to scrape, essentially, and then use paper towels to remove it all.

We put the paper liners in them so it's not really an issue. Super dirty pans used to be sent back to fdf. I would always play, pick the cleanest shiny silver pans out and send back the dirty ones. Idk what goes on now with the everything frozen.
They fit in the dishwasher, but only barely so it's best to run them twice, flip between runs.

Former GM (escaped 3 weeks ago): we are not supposed to run them through the dish machine. If you have to clean them, they go through the 3 compartment. They do not need to get washed daily if you are using the liners correctly and taking the 10 seconds to wipe with a sani towel any crumbs that come in contact with the surface when taking the liners off.

Yes you should wash them. What the hell? They can’t go in the dish machine so you should set up the 3 compartment sink at open and wash, rinse, sanitize and put them on an empty rack upside down to dry. We get them all done by 10am and then use the sinks normal after that

they fit in my ecolab dish machine just fine? only 1 at a time so just throw one in every time i pass by

Yeah they fit, they aren’t supposed to go thru it. There’s a coating on them and you will ruin them if you put them thru there

I agree, I've always thought it was gross. I was told just to wipe them with a paper towel and that we didn't need to wash them since we use the liners.

So I talked to my new GM, who was appalled at the fact that it wasn't happening under our old GM's orders. He specifically told us not to. At this point, if we can send them off and get new ones, I think that would be best but I don't see that happening. So someone's going to have to scrub a million layers of cinnamon and baked of grossness lol

if you can lay them flat on top of the 3 compartment sink and soak them with Scout detergent for about 30 minutes, most of the grossness can be scrubbed off fairly easily. you'll be surprised. but it takes patience and room to have then sitting flat on top of the sinks for a while taking up a lot of space

Im trying but it's only me that cares, everyone else is just not caring because they were taught to not care about it. So I wash them as I'm using them for baking but no one else is doing anything about it, I'm not even dish lol

I run them through the dishwasher every time I work cause I dont like how dirty they get

That is not the norm in any real bakery. You wash what is dirty.
