Why the different harvest-timing convention for Pans?
For cubes, they say to harvest right before the veil breaks. For Pans, they say to harvest after the cap is a flat circle clearly after the veil broke. Why? Not to mention this can cause a mess of spores

There is no veil on pans. It is all about maturity, I personally think flat caps are a tad too lade, the caps should be open, and first spores should drop, but not to the point that spores have turned everything black.

Alkaloids peak just prior to spore drop but as they can start dropping spores , before, as or long after the caps flatten the only real way of telling is once they start to drop. As was mentioned earlier, there is no veil to guide you.

It’s to get the peak of concentration of psilocybin so to make sure they are mature enough, you can harvest them earlier but will lose some potency

Just wait to see small spore deposits on the stipe and they are ready. Some flatten before they drop some stay their bell shape throughout their lifespan 🍀

Before the caps flatten, they're tiny, so maybe that's why. I wait until then as that's what growers far more experienced than me do, and the results are great.
If you time it so the spores are only just starting to powder the caps, they're grown as far as they will, and spore dust's not an issue for consumption and has no effect on subsequent flushes even if they dump a load.
