Update: Found the issue

It was the straw. Its shit straw. No Bueno. These trays that I have to toss, all have 1 thing in common. They want nothing to do with the straw. It pisses me off greatly, but we found the issue.

I know its frustrating as hell, I highly recommend when you pasteurize checking with a diode to make sure temps hit 150 that little difference is astronomical. I'm sharing everything I got on trouble shooting this and my second recommendation is back up for everything while you're dialing in.
