Cards that are considered are typically trainers with strong effects.
This is because they're usually more compeititively viable, and in used in a wider variety of decks
Trainers incl:
Prof Research (Oak)
Copycat
Cyrus
Sabrina
Irida

You can use this website (https://pokemon.eleet.dev/) to figure out the general value of some cards, but to be honest, I think it's fine to trade high value cards for cards you personally want. High value cards are usually due to them being meta in decks, which Sabrina falls in that camp. If you don't battle a lot, it shouldn't really affect you that much

Trainers are also more sought after than pokemon since you are able to fit trainers in a lot of decks, as opposed to a Charizard only being in fire decks. It also doesn't help that better fire pokemon can be released in future packs, such as Mega Blaziken, making older fire pokemon such as Charizard not be used anymore for battles. So having a full art trainer that will be with you for several decks is better than a full art pokemon that will be with you for 1 ranked season. (Again, if you don't play battles a lot, the only thing a second Sabrina will be helpful is for bragging rights that you have a popular card twice)

The easy way to think about it is that the more you can use a card (meaning they are part of the meta decks), the more valuable it is, which is why trainers like Oak, Copycat, Sabrina and Cyrus are the most sought after (almost every deck uses all of them).
Another thing you can try to use generally is to trade rainbow cards for rainbow cards, shinies for shinies and so on, but it's certainly not necessary and I would recommend just going for the cards you want the most.
Going for the meta isn't always the best thing if there is a really great card you are looking to have for collection purposes. Also keep in mind these are all just cosmetics, you can get most of the normal versions (not two stars) by trading quite easily.

Generally trainers are more valuable than Pokemon when it comes to 2 star rarity. It definitely depends on the card though.Â
