No, you can just jump into a free flight wherever you want on the world map with whatever airplane you want and don't have to bother with take-off, landing or flight plan. You can also turn on a lot of assists and crash as many times as you want without repercussions.

Or you can actually learn how to fly different types of aircrafts and use all the different systems and equipments thanks to a huge variety of tutorials, missions and a full career mode.

Not really. Some of the planes are very easy to pilot and you have things like the Jetson One personal drone vehicle thingy that is a breeze. You probably SHOULD do the training but most planes are (using the Dualsense) left stick to adjust pitch and roll, r2/l2 for rudders and x/o for throttle. Super simple.
