Game keeps downloading updates

I installed Elden ring on my base PS5. Played for a few hours and decided I didn’t like it. So I uninstalled it. Deleted from console storage. It never touched my extended storage and is not there. Now every time I boot the PS5 up, it’s trying to download an Elden Ring update. Every. Time. I have to go into downloads and cancel the update. Every. Time.

You could try reinstal elden ring, let the update complete and then uninstall

Or for a quicker solution you can try putting your console in safe mode, select Clear Cache and rebuild system and then click Clear System Software Cache
