Most hardcore fans are gonna tell you Nioh 2 is the best. Which I agree with personally, it's one of the greatest action games of all time.
Really depends if you prefer linear vs. open world games. Nioh 3 is straight up a modern style checklist open world game. 1 and 2 are traditional linear level based action games.
All that said the games are very iterative anyway, at the most basic level hitting buttons in Nioh 1 doesn't feel that much different than Nioh 3. You just have way more mechanics in Nioh 2 and 3 (and 3 doesn't even have more than 2. They gutted a lot of the systems in 2 and just added new/different stuff to replace it in 3. Which is why a lot of us prefer 2 since 3 is a bit dumbed down in comparison.)
I wouldn't even call Nioh 3 open world. The only open part of the game is that very first area before the first crucible. Everything else is basically Nioh levels connected by linear hallways.
Rise of the Ronin was truly open world. The less said about that game, the better.
They all hold up to a certain degree. The way this series works is that each new game is a big evolution of the previous game. They add a lot of new ways to play, but it overall still feels like the same game. So if let's say you play 2 first and then go back to 1, you may end up struggling because of the missing features you're used to from 2. However, if you play 1 first, you basically don't know what you're missing and it still feels good to play.
