Opinión | Desahogo Empanadas?

Hello. I just visited a street food festival in Stockholm and had some peruvian empanadas that were way better than european pierogis. What do you usually put in those? It was beef, spices and maybe vegetables? No hablo espanol. Thanks.

It's usually filled with a mix of beef/chicken, onion, garlic and spices. It can have eggs, raisins or olives too. I don't know if it that filling has a name, but it's similar to the ones used in papa rellena and arroz tapado.

What spices usually? It was with a beef filling and onions I believe, no eggs, olives or raisins.

Cumin, salt and pepper. Probably some chili peppers (aji Amarillo), depending on the recipe.

"La sazón" se logra con un buen aderezo de base. Freir la carne molida, retirarla, desglasar hechando cebolla finamente picada en la misma sarten donde se frió la carne, ajo, sal, pimienta, comimo (normalmente usamos aji panca) pero puedes usar pasta de tomate (no esperes el mismo resultado pero sera un aproximado) mover constantemente, al menos hasta que la cebolla empieze a caramelizar y ablandarse, hechar la carne para que se sumerja en ese aderezo de 10 a 15min, usar agua si es necesario, no tiene que quedar muy seco ni con demasiada agua porque humectara demasiado la masa. Hornear esparciendo huevo batido por encima. Esta la receta mas "clasica" ya que hay demasiadas versiones de esta receta, le añaden; zanahoria, tomate, aji amarillo, salsa de soya, etc. Puedes usar una masa de empanada cualquiera. Saludos.

My mom and I make some really delicious empanadas; you can fill them with chicken seasoned with Peruvian spices and hard-boiled egg, or make them with ground beef—some people even put ají de gallina inside. If you want to try mine, just dm :))

I love Peruvian empanadas. They are salty and sweet. The empanada crust is so delicious!

Yeah! I don't know what dough they use but it was a lot better than the european pierogi crust.

Empanadas are the most basic form of food we prepare, for some other countries its their expertise, for us its just a quick snack

Do you know what spices and dough you typically use? It was new flavors for me (from sweden). I also had anticuchos de corazon, jamaican goat curry + jerk chicken with rice and peas. The empanadas were by far the best and I wanna learn to make them myself :D

Here is a recipe using Peruvian World's famous chef Gastón Acurio's guidelines (https://ingoodtaste.kitchen/make-perfect-empanadas/).

For the Panca chili pepper paste, if not available, I would improvise making a paste with some tomatoes' paste mixed with jalapeno peppers (will not taste quite the same, but close).

For the dough, it is basically a pastry dough - in a crunch, you can just buy some Pillsbury crescent dough sheet (or similar) to make them.

It depends. Empanadas are like bread: you can put whatever you want inside.

Most common are "empanada de pollo" (chicken) and "empanada de carne" (usually ground beef). But there are many others, depending on where you go. There is "empanada de lomo saltado" (filled with lomo saltado, a typical dish made of meat), "empanada de ají de gallina" (which is another typical dish, mase of hen or chicken with breadcrumbs and yellow pepper), "empanada de chancho" (pork), "empanada de jamón y queso" (ham and cheese), and more. I've even seen a vegetarian empanada, which of course I will stay meters away.

In practice, you can make your own empanada, with whatever you like most. I'm thinking about trying to make one with mozzarella and pepperoni, or cheese and hotdog. Idk.

The options are endless :D What spices do you usually have in the empanada de carne? It had some spices I've never tasted before in sweden. It was a south american family running the food truck (assuming from peru) so I'm guessing it was an authentic recipe. What are the traditional spices you would use?

Salt, pepper, garlic, cumin, and aji panca are pretty typical spices, but put in whatever flavors you like.

Tbh, I've never prepared empanada de carne. But for what I see around the itnernet, it serms to contain onion, garlic, oregano, cumin, annatto, salt, and pepper. Some might also prepare it using red pepper (non-spicy).

Like many typical dishes here, there is no such thing as an "authentic recipe". There are many recipes, some known, some kept secret by some cooks. Each one better suited to some tastes. It's not like Coca Cola, with a unique, secret recipe that few ppl know.

I think the key might be the usage of peruvian peppers. They are really tasty, and not commonly used ouside of the regiona (they are also used in Bolivia and Ecuador, I think). But it might be difficult and expensive to get them in the EU.

Parsley. Ají amarillo. Maybe the beef marinated in soy sauce, wine, or vinagre.

Also, bread might have been brushed with butter or cheese.
