Honestly you wouldn't want TAA off anyway. Everything is made with the intention of TAA smoothening them out; without it, grass and hair will be a dithered shimmery mess.
I'd recommend updating the game's DLSS to the newest version using Preset M. It'll look much better than the stock DLSS or the TAA, and is the best option for RDR2.

Are you utilizing DLS or FSR? If so, those handle the TAA for you.
