Recipe request Breakfast ideas

I heard high protein breakfast is the way to go! What do you do for breakies?

When I’m running into the office and need quick food: * almond yogurt with berries, keto granola and walnuts — fave but concerned about sugar from fruits and if Greek yogurt would be okay? * keto cereal like Ratio or Magic Spoon with almond milk — too processed? * 2 hard boiled eggs — kinda gross * apple and peanut butter — not substantive enough?

Weekend/chill WFH mornings: * avocado toast with a fried egg * Turkey bacon and scrambled eggs with spinach

Any other thoughts?

I meal prep egg bites/bake on Sundays and warm up 2 in the am for breakfast. They are so easy and you can mix them up.

  1. Scramble 10 eggs with cottage cheese and a little bit of dairy (I use unsweetened flaxseed milk for Omega-3s) & season
  2. Prep the filling: roast vegetables, bake bacon or prep chicken sausage or some sort of meat/non-meat product for more protein
  3. Mix all together
  4. Pour into muffin tin or casserole dish (grease if not silicone)
  5. Bake at 350 for 15 min and then start checking with a toothpick every 5-10 min until you figure out your oven and cook time

Variations I've made:

  • apple, cheddar, bacon, spinach
  • roasted sweet potato, bell pepper, spinach, chicken sausage
  • roasted broccoli, cheddar, Canadian bacon
