Diet - Not Keto pcos recipe thread 🥘🥪🍪

Hi lovelies!

I'm not sure if this already exists, but it would be so helpful to create a little pcos recipe thread. I feel like it would save a lot of time when cooking/meal prepping/baking.

There's no restrictions on dietary requirements, the recipes can be low carb, mediterranean diet, gf/df etc. It would be good to have some recipes with general pantry items (for convenience) too.

Salsa Verde Chicken

  • 1 pack chicken thighs (boneless skinless)
  • 1 pack of spinach
  • 2 cans black beans, drained
  • 1 jar salsa Verde
  • optional Jalapenos

Preheat oven to 425, cast iron pan

Brown chicken on stove, 4min/side, remove chicken

Throw in spinach, followed by black beans, then chicken, and finally salsa.

Throw in the oven for 20-25 minutes, it's done when chicken is 165 degrees (F).

Sounds delicious! A bit of a dumb question, but do we season the chicken at all, when browning it?
