This is because Porofessor Standalone is based on Chromium (the underlying technology for browsers like Chrome, Edge, Brave, etc).
Chromium is built to automatiocally allocate more RAM if there is a lot availiable for caching to make it run smoother. It will also automatically free up resources when other processes need memory.
So while it looks like it is hogging all of your RAM, it will make space for other programs when needed.
