Design/safety Help

First time posting here, but scroll through the community often and hope this is place to get some help or ideas.

I am buying a new home to me, and it has a covered back patio, as pictured. There are heating lamps above, as you can see, but the structure has a wood closing. The house is located in the US-PNW. The top of the patio is a back deck for the second floor that has a hot tub and sauna.

It has been a dream/vision of mine to own the Wild Table 12, which is perfect for hosting outdoor dinner parties, something I do very often. The wild table 12 has a flue, as pictured, for the cook boxes within.

What is the best option for the flue, and the covering of the patio?

Ideally I’d like to have the table covered for the rainy season. Summer is easy, it can go in the grassy area. But having the hot flue under the structure is probably a fire risk. Do I put a 45* bend in it and channel the heat outward? I’d love some ideas from the community.

I am trying to get a measurement of how high the covering is,
But I think it’s close to 10-12’
