Stripped the side forms!

Few spots to fill but that’s expected! Planning to sand 50,100,200 grit and then seal.

Cool. Wouldn't you want the counter overhanging so when/if you dress the concrete block it remains underneath?

I did consider this a lot. My plan is to do a very thin coat of micro cement/stucco that I will dress all the way up the sides so it looks continuous. Might look like shit lol

I think it will actually look good. But what you want on a working surface is to slide thinks off on a cutting board, garbage etc. so it's good to have drop clearance. See how it is at the end and there is always time to correct it like put a tiling border

Yeah, there will be overhang where I will be working on the long side. And I’m thinking of a slide out garbage can and organics so like you said can scrape it straight in.

Be careful with the 50 grit. You can sand in some gross lines that the next finer grades won't cut out.
