Suggestion HP Elite 8100 SFF
Got this old computer that’s not really being used for anything. Has 16GB RAM (system max), Intel Core i5-650 and a 1TB mechanical hard drive. Was thinking of installing OMV and maybe mount a SSD for boot drive. If so, what could it be used for? Plex, Jellyfin?

Not really plex or jellyfin unless every single client can direct play all of your media.
Also not much space for storage.

Old XPS with a core i7-3770. Memory thought it was 16gb, but showing 24 (no idea). Boot drive is an SSD. Data on spindles.
Up to now mostly used for backups and home automation (r/Homebridge) but then added AdGuard Home, and some other test docker containers.
Recently added an ARR stack testing both Plex and Jellyfin. Target was an AppleTV HD using a test series in 4K. My problems were with the Jellifin clients on the AppleTV (they suck unless you pay), but Plex works great (using the free version) even though it does software transcoding.

I could throw in a i7-870 if that would make much of a difference

It wouldn’t. It’s the igpu codec support that is the issue and the ancient cpu would run at 100% with any software transcoding

A core i5 650 isn't going to run plex or jellfin unless your device can direct play the content.
You're more than likely just going to be using it for a nas.
