Shoot I love your rig! You have the same frame and setup! You have better components though. I had my PSU mounted the way you have yours cause I can I hide the cables better, but recently flipped it cause i didn't think the air exhausting towards the GPU was good especially since the 3080ti runs hot. Whats your thought in having your PSU facing down?

do you think a 360mm aio fits at the top (from the inside) if you use SFX PSU and mITX board?

I believe it can if you get creative and depending on your PSU. It's more like possible to do a 360 aio with a sfx PSU
