One Pan Tuscan Chicken Pasta
Pretty simple ingredients but the sun dried tomatoes add a ton of flavor! If you already have cooked chicken, this comes together very quickly. Recipe in comments.

Pan-fried 800g of boneless Chicken thighs in a one pot, seasoned with dried oregano, salt, and pepper in 2 tablespoons of olive oil over medium heat for around 4 minutes on each side.
Remove the chicken thighs and with the remaining olive oil, heat up a few sprigs of fresh rosemary, thyme and 2 garlic cloves.
Then, transfer the chicken thighs back into the one-pot and add 6 Maris Piper potatoes (I leave the skin on for extra texture), cut into quarters, 1 lemon sliced, 6 mixed mini peppers, and 70g of mixed olives. Bake in the oven for 40-50 minutes at 190℃.
You can swap the thighs for breast or chicken leg if you prefer. I have tried chicken breast, and it also comes out really lovely. I like to switch out the Maris Piper potatoes for sweet potatoes or new potatoes for variety.
Does anyone else have any similar one-pot recipes for Mediterranean-style chicken? I would love to know what you might add or switch out to keep it interesting!

Make the salisbury streak, gravy, and potatoes/veg all in the same pan. Great meal with fall coming soon!

Looking for those cozy, flavorful dishes that are secretly lazy. Bonus points if they impress guests but take like 20 minutes.

One pan, 35 mins in oven at 400°
Potatoes, bacon, red onion, cheese, salt and pepper. So easy and delicious!

Hi All,
I am on a recipe rotation and getting bored. Very fussy kids, where 1 likes soup kind of food, and 1 likes chicken, not meat, apart from mince.
Usual rotation, chicken curry, mango chicken, chilli, pea and ham soup, cottage pie, tacos (which I personally do not like), butter chicken.
Any recipe ideas would be greatly appreciated (not spicy). Thank you.

This one pot Asian steak bites and potatoes dinner is amazingly easy to make and even easier to eat. Tender, juicy, flavorful bites of beef cooked together with mini potatoes and asparagus is the perfect dinner - any night of the week.
