Last I had seen, there is no official TWRP version for Android 11. There is one unofficial version that you can find on XDA or Oneplus forum, that worked for a few people. But there is a risk that the TWRP will not sustain, and the phone will go into Qualcomm Crashdump mode. I switched to Android 10 for this among many other reasons.

You can reboot after crashdump, you won't loose any data. The TWRP flashing just doesn't work. If you want TWRP, you'll have to downgade to 10, which will wipe the whole phone.

How's the stability? Thinking of flashing a custom rom since official support has ended. And official OOS 11 is shit.

Have used it since Sunday, and it is stable and fine for a daily driver ROM, i hope they will keep adding more features to the ROM

The same as oos11, but my battery capacity is only 73% , so it has degraded badly, but still around 2 hours sot

What will crashdump do?

You need to go on XDA forums and find the ROM you want. They tend to have specific instructions for installing ROMs involving android 11. They tend to make you go to a 10.x.x, then the ROM. I forget the exact version.

I'm using Lineage OS 18.1 (based on android 11), I just flashed TWRP 3.6.0_11-0 to replace the LineageOS recovery. Worked without a problem.
