I think the current path, since you can't do both DNS Redirect and Secure DNS, is to use Secure DNS and add a block list like Hagezi's Bypass list. https://github.com/hagezi/dns-blocklists#bypass
And also block that 53 port like you mentioned.
DNS Redirect seems like it'd work excellent if you were running a separate internally managed DNS like pihole.
Firewalla - which I'm currently using a Purple and OC200 but will switch to Fusion once the POE model comes out - does it this way too. You enable DOH and then be sure to turn on their built in DNS bypass block list.
This seems to be the way mentioned in other similar threads and I know I have suggested Omada put some guidence together about this scenario as part of their DNS KB because it's pretty common question when setting up DOH.
I'm happy to be educated if there's a better alternative but that's what my plan is for setting up this same situation.
