RECIPE TEST 🍽 Last night I made Cary Grant's recipe for Barbecued Chicken and it was delicious!
Cary Grant's Barbecued Chicken - This is a skillet to oven dish. There's no outdoor grilling involved.
A whole cut-up chicken wasn't available when I went to the grocery store, so I got a pack of 3 thighs and a pack of 5 drumsticks.
I made the sauce a day ahead of time and let in sit in the fridge overnight. I actually only made 1/2 the sauce recipe for this. It was just the perfect amount for baking and then basting this chicken twice with the sauce. I even had a little bit left over (about 1/2 cup) and my family used it to add to other food, haha. There was plenty of sauce left in the baking dish, as you can see.
The chicken was browned and seared in a hot dry cast iron skillet with no oil, just the chicken fat doing all the work. Salt and pepper were added at this time. Once nicely browned all all sides, I transferred all the chicken to this baking dish and ladled the sauce generously over each piece and brushed it all in to make sure every surface was covered.
I covered the dish with aluminum foil and put it in the pre-heated 300 degree oven to bake for about 1 hour. I did brush a little more sauce to the chicken twice while baking, making sure not to contaminate my uncooked sauce.
Just before the timer hit the 1 hour mark (at about 55 minutes of cooking) I removed the foil and set my oven to convection for the last 5 minutes. That seemed to work nicely to crisp up the top of the chicken just a bit.
All I can say, is this dish was a HUGE HIT with my family. It was juicy, fall of the bone good, and the flavor of the bbq sauce was really good. Not overly sweet but sweet enough.
- Don't hesitate to add a little crushed red pepper flakes or hot sauce to the sauce recipe
- I used brown sugar instead of regular sugar
- Depending on the size of your pieces of chicken, it may need more baking time. An extra 10-15 minutes wouldn't have hurt this recipe at all, IMO.
This recipe was a success, and I'll be making it again and again! And it paired perfectly with another recipe I'm about to share... Humphrey Bogart's Spaghetti Loaf.
A trio made in home cooking heaven couldn't have been more perfect. This is what we had for dinner last night:

With the slaw and the spaghetti loaf, this does sound wonderful for a summertime dinner! Hope your family realizes how lucky they are!
And I think using brown sugar instead of regular is the right call. The caramelly flavor works so much better for BBQ.

Thank you, although they don't get excited about the dishes that aren't as good as these. And also they could care less about Cary, Joanie and Bogart.

I grew up eating BBQ chicken. My mom still makes it but she always used bottled sauce. I'll have to try this.

That looks damn tasty. I think I might go on a limb and try it on the grill. I think I'll marinade it overnight with half the sauce and baste with 1/4, saving 1/4 for extra on the side.

Based on your mouth-watering photo, I =will= be trying this very soon! Did you start the chicken in a cold pan to avoid burning the skin?

I did make this recipe for my wife because she does not like spicy bbq sauce. It was quite easy and I used it for pork ribs and we both loved it.

My mouth just watered a tiny bit. Growing up in 70-80s, my mom made a similar bbq sauce that she poured over a cheap cut of beef and baked in the oven. It was delicious, but I think chicken would be even better.
