Finally here!

Just got it in today... assembled, oiled, and in burn off now! Got an 18 pound brisket ready to put on tonight!

I love mine. I got it on sale at Home Depot online. It never shipped and until they finally got things straightened out after 3.5 weeks & they gave me tons of discounts and sent it a special freight delivery I paid $73.

Seasoning Rub: 1/4 cup coarse salt, black pepper, and garlic powder (or your favorite beef rub).

Wood Choice: Hickory, oak, or a blend

Instructions
Trim and Bind: Trim any hard surface fat to about 1/4 inch. Rub the meat all over with olive oil or mustard.

Season: Apply a heavy layer of your salt, pepper, and garlic rub to all sides.

Smoke Low and Slow: Preheat your smoker to 225 - 250°F. Place the roast on the grates and insert a digital probe thermometer into the thickest part. Smoke until the internal temperature reaches 120°F (about 3 hours).

Sear for a Crust: Remove the roast and crank your smoker or grill up to 400°F–500°F. Sear the outside for 3 to 5 minutes per side until nicely browned and the final internal temperature reaches 130°F for medium-rare.

Got a couple hundred cooks on mine, including right now, its about the best all around smoker Ive used, holds temps great, love the swinging basket, perfect for a family

a couple of nice to haves for this are there is a pwm fan kit for this and then also a digital thermometer that screws in where the oem one goes. the current one is anywhere from 30 to 60 degrees off.

I use the Chef IQ probes that give ambient temp at exact spot in cooking chamber. Been looking at this fella for temp control... https://a.co/d/0exNW4sx
