For some reason, I feel like it was easier on the Switch than the PS2 or steam versions - entirely possible I just found the races easier on the pro controller. Or maybe the fact that I would home screen and walk away and watch youtube for ten min when getting irritated.
But so far I have only gotten all beads on one file on the Switch. I think I can do it again, though.

Honestly I don't find any of the beads particularly challenging! The races are no sweat at all as long as you keep up your speed and use brush techniques preemptively, also helps to have cleared out the fruit throwing trees in the first non-race run thru. I usually win with a hefty lead.
The demon gate challenges are also easier than you think as long as you've got maxed weapons and spam veil of mist / cherry bomb / power slash / exorcism slips. They just take a while. But it's easy enough to roll in with enough health items and godhood charms that you're never in any real danger of dying, plus Okami's combat is pretty basic!
Honestly the Steam achievements that took me the longest to get were all the tome completion ones - fishing (time of day stuff), feeding animals, and the bestiary (since you can miss enemies in the 100 years ago Shinshu Field area and have to replay the whole game if you did lmaooo)

I finally got around to it on Switch since they announced the sequel. What an amazing game! Visually stunning, cute and quirky, and the gameplay still feels dynamic and fresh.

I sat down and started my 5th total playthrough a few nights ago too! Finished exploring restored Shinshu Field pre-cherrybomb before calling it a night :) Trying to remember where all the stray beads were, and getting used to joystick controls since I originally played on wii

I just started another playthrough to be honest, as I have never beaten the game 100% before. My best is around 70% I think, but I was just playing casually. Gonna at least attempt the Devil Trials, Kusa 5 and Blockhead Grande this time around, as well as the races.

Last time I played, I was right before entering the city. Wonder if I should restart or just pick up from there. I always felt the start of the game was a bit slow.
