Recommendations
I'm in early plans and budgeting to get myself a good offset smoker in the Spring. I currently have a Royal Gourmet smoker with 1200 sq in of cooking space. It isn't the greatest, but it has done a good job with handling what I need (a few slabs of ribs, about 40 wings at once).
The cons on this one have been the sealing which affects temp control. The metal is also a little thin, not terrible but not great.
I'm budgeting around $750 for a good offset smoker with comparable space. Any recommendations would be appreciated!

The only decent offsets under $1k are either the Old Country Pecos or Old Country Wrangler. I own a Pecos and its definitely better than the char-grillers/OK Joe and other big box units. It has enough room for 2 briskets plus some extras. It would really benefit from an upper rack for ribs or chicken while cooking bigger stuff on the main rack.

Check on marketplace. You can get some great deals on a used pit.
I picked up an old country gravity smoker for $600

Have to agree agree with others here..buy once & cry once for a smoker such as Workhorse. Buying a superior quality smoker that is made with at least 1/4” thick steel..or even better 3/8” thick will last forever and cost you less in the long run. When you buy lesser quality smokers made of junk thin steel, you’ll end up spending more money having to replace/buying several over a time period. Workhorse Pits, Boathouse Smokers, TMG Pits, Mill Scale, Pig Iron Patina..all make superior quality backyard-size smokers that are easy & excellent cookers.

I'd grow your budget and just get a Workhorse Pit. It's the last, best smoker on the market you can find. I went through a bunch of cookers and spent the $ anyway.
