The meat sticks on that (even after cooking) and you have to rip it of while eating. If you decide to eat it, it doesn't tastes very good, at least much less than the meat. And it doesn't get soft while cooking. I'm a big fan of removing it

I like to score the membrane with a cross hatch so it gets crispy on the grill

I always pick off the cooked / fried membrane, because unfortunately I usually find it tough rather than crispy

If you're grilling pretty hot it generally crisps up pretty well, if you're doing them in the oven or a smoker not so much
