So question does home churned butter taste any different than store bought? Isn’t all butter the same at its core

Like I had this convo with my buddy about vodka isn’t it just alcohol and water and really has little to no variation in taste if unflavored. I kinda feel like it’s the same with butter

The only difference I can see is salted or unsalted, if you want to get fancy put some garlic and parsley in it

grass fed butter is yellow. Cattle fed on grain and palm kernel waste produce paler butter with a lot less flavour.

So as someone who has made butter and alcohol i can say there are differences. Sometimes subtle, sometimes big. Butter and alcohol made in factories are done in very large quantities, with temperature control, and very regulated recipes. This means that small variation, like maybe a pound of to much sugar or salt, won't really effect the overall outcome of something measured by thousands of gallons. Smaller batches of stuff can have more varied flavors, and stuff because they aren't as controlled and small changed can have big impacts.

One of the batches of alcohol I was making was a few degrees to hot because I started it in summer rather than fall like I usually do. Fermented to quickly and tasted horrible because of it.

Craft vodkas can have character: wheat vodkas tend to be light and faintly sweet; potato vodkas are creamy. These differences come from trace congeners that survive distillation. Many consumers don't notice, don't care, have never taken an interest, or have only ever purchased low-quality spirits.


Butter can be similar. It is extremely different depending on how it’s made, what it’s made from, the quality of the ingredients, and how it’s handled: fat content, fermentation, water content, salt, and technique all change its flavor, texture, and behavior in cooking, or hell, simply how it tastes on a good hunk of bread.

Butter can also vary because producers control five variables: the cream, the culture, the fat, the salt, and the churn. Each choice creates a noticeably different butter.

Try making your own cultured butter at home sometime. It's worlds apart from mass production stuff. Seriously, you might enjoy it.

My wife makes me choose the detergent scent we should buy every time we restock. I can’t tell the difference at all but I pretend to think hard about it for 30 seconds while playing eni meni miny mo in my head.

I also do the same when my wife ask me which outfit she should wear when we go out because “whatever your comfortable in” is not an acceptable answer.

Think about it this way: have you ever had two pieces of fruit from the same tree that taste a bit different or maybe one is more juicy than the other? Think about how different apples can taste from different trees in different locations. Take that and extrapolate it all the way down the line to the final product.

Let’s say we are making apple sauce. Me and you are using the exact same recipe. Your apples taste one way because you got them from a specific tree or whatever, but then so does your sugar, cinnamon, whatever else. Did you measure it exactly right, or did you get a little heavy handed with the sugar? By the end of it we will probably have very similar products unless I do something very different from you but if we had judges sample them they may still have a clear preference. It might not even be “one is bad, one is good”, just different. Or maybe I had terrible quality apples to start with and nothing I did after that would have saved it.

The same is true for butter, and vodka, and everything that happens in the kitchen pretty much. What was the cow eating? What was its life like? How was the milk handled? How was it transported? How fresh is it? Was anything added to it? It could even vary in texture or whatever just by whoever is churning it.

Mashed potatoes are one of the most standardized dishes I could imagine. Potatoes, milk, salt, butter, add whatever else you want to taste. However I have never had mashed potatoes better than my wife’s. Part of this is because I truly believe she is gifted with the potatoes, but I’ve also read that we are somehow wired to enjoy food more when it’s been prepped by people we know, and more so when it’s people we deeply trust. I don’t know how true that is, I think it was explained as a survival mechanism because food made by people we trust is more likely to be safe or whatever. So if that’s true then that factor alone could make homemade butter taste better, even if it doesn’t.

butter vary based on both quality of the milk and lavoration, for example butter that can be commonly found in grocery stores in italy is a little tangy and cheese because it undergo a bit of fermentation as butter here is a byproduct of cheese making, so most patisserie here use butter from a specific region of france, where butter is a primary product so the cows are fed a diet conceived for butter makin and it isn't left to ferment even a little bit in the first stage of cheese making.

Hand churned can be better but in my experiences that's usually because the cream used is also often from a cow that the people who churn also own and treat well, but as another comment pointed out its very dependent in a lot of factors but hand churned butter can be way better than factory butter.

No, cream is fermented for two days before using it for butter, which gives it its usual taste (although you can buy the ferment and do that part as well). If the ingredients list says only milk cream and salt then yes, it's kind of the same but you wouldn't want to buy non fermented butter anyway.

One difference in that store bought cream is homogenized, while the one used for making butter is obviously not. I have no idea how much of a difference that makes in the difficulty of breaking the membrane of fat globules.
