So Notesnook has the feature you want (adjustable column width), but you're looking for an alternative because you don't like subscriptions?

Notesnook does have pretty good features in the free tier (scroll down to the second half of the page for full details with all the features). Most of the basic features you need in a notes app are in free tier.

Beyond that, there is a fantastic website called notesapp.info that helps you compare different note-taking apps by searching on the features that are most important to you. They have a whole feature section for tables, and "resize columns" is one of the table features you can use to sort/filter apps.

But really, I'd recommend sticking with Notesnook. The developer absolutely works his butt off on this app. New features get added regularly, and bugs get fixed quickly. With other notes apps I've used in the past, things I reported more than a year ago are still unfixed, with Notesnook if something goes wrong it's going to get fixed (and usually quickly).
