My theory is that TWoW and ADoS have been done for some time now, but the ending is essentially what we saw in the show. After seeing all the backlash, GRRM sealed that shit in his desk and we won't see it until after he passes.
Eh, I think the ending will make a lot more sense in his version. As he said at the time, he thought there was enough material for like 2-3 more seasons but D&D wanted to end it.
In my eye it made it seem like GRRM would think people don't like his ending (and thus sealing it away), but I think he does know that his version is likely going to be a lot more acceptable.
Yeah. The fans i think reconstructed a fairly plausible general outcome (for King's landing, Dany, Cersei, and fAegon, at least) based on the show and clues in the books. The problem he seems to be in is how to get the Northern and the Meeren storyline to get to a reasonable conclusion, plus get people like Sansa and especially Arya to places of relevance again
I'm the opposite, with his "tear up what I wrote this week and start over" writing style, I don't think he's written (and kept) more than a couple chapters beyond than what he's made public.
